آگ، دھواں تے داستان
A Punjabi flame-house in Dubai. Charcoal-forged plates, flavour-packed shisha, and voices that carry until the last coal dies.
Moula De Jutt was built on one stubborn belief — that the best Punjabi food isn't cooked, it's fought for: over open coal, at a heat most kitchens are too polite to touch. Everything after that — the smoke, the music, the long tables that never empty — followed on its own.
Charcoal only. No gas, no shortcuts. Seekh turned by hand until the fat starts to sing.
Heads packed to order, coals refreshed every twenty minutes, terrace open till three.
Qawwali on Thursdays, Punjabi folk on Saturdays. Nobody here sings quietly.
Eight plates that carry the place. Everything grilled over live charcoal, everything cooked to order — which is a polite way of saying you will wait, and it will be worth it.
Seekh kebab, malai boti, chicken tikka, lamb chops, grilled onion, two naan and both chutneys.
Overnight-marinated whole chicken, steamed then blistered over coal. Served with imli chutney.
Bone-in mutton, crushed tomato, black pepper and green chilli, finished with ginger julienne. Full kilo.
Eight hours on low fire. Shank meat, marrow, and a chilli oil that will find you later.
Long-grain basmati layered with mutton, saffron milk and fried onion, sealed and left alone. Raita on the side.
Flaky paratha, charred beef seekh, raw onion, mint chutney and a pickled green chilli you were warned about.
Slow-reduced rice kheer, pistachio, rose petal and silver leaf. Set in clay, served cold.
Boiled long, no water, served in unglazed clay. The reason half the terrace is still here at 2 AM.
